One of the reasons this time of year is so fantastic is easily because of the delicious food. Butternut squash is plentiful and at it's peak right now and I can't think of a better way to put this vegetable to good use than to make my favorite lasagna recipe. Everything Jessica of How Sweet Eats makes is amazing but this is in my top three of her recipes. You roast the squash and sweet potatoes, puree, and layer the mixture with mascarpone cheese, brown butter, garlic, shallots, and whole wheat lasagna sheets. It is practically health food. Pair this recipe with this amazing autumn arugula salad and you have yourself the perfect fall dinner.
